Video Description

Gutti Vankaya Kura is an authentic South Indian side dish which is made by stuffing Indian spices into egg plant and cooking it in oil. Andhra Special Stuffed Brinjal Ingredients Brinjal - 1 dozen A few Curry leaves A few cloves of Garlic Salt Chilli powder Ghee - 1 tsp Andhra Masala powder - 3 tbsp Method: 1. 1. Mix salt and chilli powder and rub it into the brinjal and let it sit for about 5 minutes. 2. Pour 2 tbsp oil into a wide pan, and place the brinjal one by one into it and let it cook for about 2 minutes. Toss it around and let it cook for another 2 minutes. 3. 3. Mix the Andhra Masala Powder with ghee, and stuff it into the brinjal. 4. 4. Add a few curry leaves and garlic cloves and the stuffed brinjals and cook it in medium steam for 5 to 10 minutes.
