Chef Jean-Claude Rodriguez is a big fan of cassoulet -- and hopes you will be, too. The ancient recipe, which originated in southwestern France, is a stick-to-your-ribs staple of French cooking that combining beans and duck. Now, a group of dedicated chefs known as the Universal Academy of Cassoulet are working to bring the French favorite to new shores.
